Since then, it has undergone changes and revivals, evolving into a dish now recognized as the inn's specialty. The name 'Ponchin-nabe' comes from the sound of bubbles popping ('pon') when the miso boils and the clinking ('chin') of metal skewers against the metal pot. Think of it as a miso version of cheese fondue for the best visualization. Please enjoy this unique Ponchin-nabe that you can't experience anywhere else.
