A culinary inn established during the Tensho period Our establishment dates back approximately 450 years to the Azuchi-Momoyama period. It all began when a tea shop was established as a roadside teahouse along the Wakasa Highway (commonly known as the Saba Highway). Travelers of the time would gulp down the now-famous 'barley rice and grated yam' before continuing on their journey, it is said. Here, you can enjoy our specialty 'barley rice with grated yam' as part of our kaiseki cuisine. Kama-buro - Traditional Japanese steam bath- You can also experience a 'traditional Japanese steam bath (Japanese-style sauna)', which is rarely seen nowadays. The temperature inside the kama bath is 55–60°C. In a giant igloo-shaped hollow furnace, mats made of straw and rush are laid down, You bring in a ceramic pillow, lie down, and warm yourself. and since the temperature is lower compared to regular saunas, it places less strain on the heart and muscles, allowing you to relax and enjoy it for 20 to 30 minutes. During the Tenshō era (Azuchi-Momoyama period), a culinary inn in Kyoto's Rakuhoku region was established as a teahouse along the Wakasa highway. For 450 years since then, we have continued to preserve and pass down our techniques. By refining these inherited skills, we offer Kyoto-style kaiseki cuisine made with carefully selected ingredients. The seasoning enhances the natural colors of Kyoto-style ingredients while delivering a distinct and rich umami flavor. Fresh 'bounty from the sea' and 'barley rice with grated yam soup.' You can also enjoy our specialty, 'Guji (tilefish) Wakasa-yaki.' 'Guji (tilefish)' - An indispensable ingredient in Kyoto cuisine - The Wakasa highway, also known as the 'Mackerel Road,' connects Kyoto and Obama, a town by the Sea of Japan. Wakasa has long maintained deep ties with Kyoto, offering ingredients to the imperial court. It is known as "Miketsukuni" The 'Guji', a representative ingredient of our kaiseki cuisine, is brought from the Sea of Japan, spanning areas such as Wakasa, Tsu-i-yama, Hamada, and Kyushu. At the meeting point of warm and cold currents, the fish grow by feeding on high-quality food, their flesh becoming rich and flavorful, resulting in large, fatty, tender meat with a delicate and aromatic taste that is highly prized even in Kyoto.
