At 'Yoreruya', instead of interpreting seasons based on the traditional four seasons, we adjust them according to the transitions of the time, deciding ingredients and cooking methods based on the twenty-four solar terms and seventy-two micro-seasons, expressing the local culture of Kurashiki through a culinary experience. Additionally, to express the regional culture of Kurashiki through food, Yoreruya designs its menu inspired by the historical development of the town. Kurashiki has historically flourished as a logistics hub utilizing water transport, with goods from both domestic and international sources entering through the Seto Inland Sea, passing through Kurashiki, and being transported to Osaka and the Kansai region. Reflecting on this background, we approach all kinds of ingredients from the Kurashiki region—such as fish caught in the Seto Inland Sea and mountain delicacies from nearby areas—using Japanese culinary techniques. The dining experience at 'Yoreruya' aims to create a space reminiscent of a feast hosted by a long-time resident of this land, where visitors can become travel companions, deepening their connection to Kurashiki.
