Dinner starts with the "Maehachisun". The "grilled smoked golden-eyed snapper" made with cherry wood chips has just the right amount of fat removed, and the aroma that wafts through your nose will whet your appetite. The "abalone" is soft due to the amylase effect of the radish, and the simple flavor of soy sauce, sake, and sugar permeates the dish. The "beef" is sweetened with Saikyo miso, and the addition of grated apple gives it a mild flavor. Eight other seasonal dishes, such as "Manganji chili pepper grilled" and "edamame tororo" add color to the dish. For the "sashimi", we offer seven types of fresh sashimi carefully selected by the chef, including local sea fish. The content is decided by the purchase of the day, so it's a surprise, and you can enjoy the change in flavor with two types of soy sauce and Shimoda salt. The presentation is also particular, with two layers of elegant sashimi and a small plate and basket of Maehachisun sea bream, creating a gorgeous presentation. After tasting the delicate dishes, we have the "S-class Turban Shell 'Goshinka'", a local specialty of southern Izu, four times the size of a normal shell. The turban shell, shiitake mushroom, bamboo shoot, and mitsuba are gently flavored with soy sauce and bonito stock. As you eat, you can feel the elegance of the "fishing lights" floating in the sea of Izu. The final dish is "3 kinds of hot dishes" of meat, fish, and vegetables. The "braised pork" made from Shizuoka Prefecture is prepared in a Japanese style with tamari soy sauce, and finished lightly with green onions and ginger to remove the odor, with a little spiciness added with the secret ingredient of chili oil. The "Fried Alfonsino" is made by removing moisture with salt, crisping the skin and plump flesh of the alfonsino, and then pouring a thick sauce made with bonito stock for an exquisite texture, while the "Seasonal Boiled Vegetables" offers ingredients and seasonings that allow you to feel the season.
